“ This is good pizza. It could be great pizza, at least in my opinion, with a few easy tweaks. And, I get that people have their preferences with the style of crust, how much sauce, and all of that. So again, this is just one person's take on how this place could go from good to great. 1. Crust... This is the thin, Me and Ed's style crispier crust. I like all different styles of pizza, and this crust is actually pretty good. Wouldn't change a thing here. 2. Sauce... I wish they used to just a touch more sauce. When you think about it, that's where a lot of the flavor of the pizza comes from. And, the last couple of times I've had pizza from here, at least the takeout version, it was a little bit dry. Honestly, I couldn't really tell you what the sauce tasted like, because there so little on the pizza. 3. Toppings... I have a couple of what I think are important suggestions here. First, I think the goal should be that every bite of pizza gives you a bite of most of the toppings. But this time, the first few bites of the slice had toppings, but by the time you got to a couple of inches away from the crust, there was hardly any toppings. This is a pretty easy fix in the kitchen... Just make sure that when you're spreading stuff around you go almost all the way to the edge of the crust. I also think a combo pizza, or let's say a six item pizza, should have six times the total amount of toppings as the one item pizza. In other words, if I order a pepperoni pizza and it comes with 30 slices of pepperoni, and if I order a mushroom pizza that comes with one cup of mushrooms, then when I ordered a pepperoni and mushroom pizza it should have 30 slices of pepperoni plus the one cup of mushrooms. I mean, you charge extra per topping right? My combo pizza that I ordered last night included pepperoni, but there lots of slices that had not a speck of pepperoni on them. Same with all other toppings. Last thing on the toppings: in my opinion, those canned mushrooms are gross and disgusting! You guys use fresh red onion and green bell pepper on your pizzas, which is great. Please please please consider using fresh mushrooms too! If you feel like they tend to dry it out in the oven, just sauté some fresh mushrooms in a little olive oil and garlic and leave them in the pan until you need them for the toppings. That's what I do at home, and it's amazing. 4. Cheese... I wish you guys were a little more generous with your mozzarella. And, if you were to add a little bit of fontina into the grated cheese mix that would be awesome. And a nice sprinkle of Parmesan or Romano on the top would help a lot too. Not the powdery stuff in the green box, but actual grated cheese. Mozzarella by itself is nice and gooey, but it doesn't have the flavor of the other cheeses. You guys get extra points for including the little to-go cups of chili flakes, grated cheese, jalapeños, ranch (we never use ranch with pizza... Seems really weird to me! But hey, that's just my opinion, right?) Those little packets that some places give you are a pain in the rear, and I think it's really lame when they charge you extra for them. I know this review is super long, and maybe it's none of my business to suggest how they might change what they're doing. But I really like this place, and I want to love it. ”
